Ingredients:
1½ lbs. Baking Flour
1 lb. Brown Sugar
½ lb. Butter
½ lb. Margarine
9 Eggs
4 Teaspoons Baking Powder
3 Tablespoons Benjamins Vanilla
1 Teaspoon Cinnamon
2 Teaspoons Grated Nutmeg
1¼ Teaspoon Salt
Benjamins Browning
½ Cup Blackberry Brandy
½ Cup Sherry
1 Cup Tia Maria
Method:
Cream butter and margarine until soft and gradually
add sugar until mixture is creamed. Add two (2) eggs
at a time to butter and sugar mixture. When this is
mixed in, pour into a large bowl. Combine flour, salt,
cinnamon, nutmeg and baking powder. Mix portions
of the flour mixture to butter/sugar mixture along with
brandy, sherry, Tia Maria, vanilla and browning to the
colour of your choice. Add fruit mixture and mix in well.
Line cake tin with greased paper. Mixture can be baked
or steamed. Bake at 300°F for about 3 hours. Steaming
also takes 3 hours.
